Ardmac were delighted to work with Douglas Wallace Consultants for TIFCO Hotel Group, owners of the Hilton Hotel- Kilmainham, to deliver the new concept design for their Food and Beverage offering. The Hotel has operated in this historic area of Dublin – near the Museum of Modern Art at the Royal Hospital Kilmainham and opposite the historic Kilmainham Gaol – since early 2000’s. The hotel itself was built on the site of the old Rowntree Chocolate Factory.

Ardmac and Douglas Wallace worked in close collaboration with the client on all design aspects with the finished result appropriately named ‘Broyage’ – referring to the process of grinding the cocoa bean in homage to the site’s history.

The new fit-out creates a warm, comfortable and modern environment that caters to hotel clients, transitioning seamlessly from morning bistro into the evening brasserie. It is at once airy, welcoming and intimate.

Bespoke joinery was commissioned, which created a new elegant French-style drinks bar. Modern timber wall paneling throughout enhances the restaurants warm and sophisticated atmosphere. The floor finishes, a harmonious mixture of parquet hardwood with antique patterned tiles, adds a unique focal point to Broyage. Ardmac altered the existing ceiling which allows the stylish area to command attention from the modern light fixtures to the chic small rectangular white tiles.

The design feature of a installing a ‘shopfront’ leading from the Hotel lobby space delineates the new Bar/restaurant – marking ‘Broyage’ as an exciting Food and Beverage experience for the Hotel and the area in general.

Works were completed in a live environment from the demolition and strip out of existing finishes, bar, fixtures to the minor M&E works, limited interruption to hotel guests or employees. The Ardmac team diligently worked to furnish delivery within three weeks, safely and on budget.
